Cucumber salad with shrimp recipe details
Ingredients
1 large | cucumber |
450 g | frozen northsea shrimp, peeled and cooked |
1 | red chili pepper |
2 | spring onions |
1 | lemon, grated peel and juice |
1 tbsp | sunflower oil |
Instructions
Thaw the shrimp, then rinse, drain and place into the fridge. Peel the cucumber and cut lengthwise, scoop out the seeds and cut the cucumber into 0.5cm half moon slices. Season with salt and place into the fridge for half an hour. Seed and finely chop the chili pepper. Finely chop the spring onions.Drain and pat dry the cucumbers and place into a bowl. Add the shrimp, chili peppers, onions and oil. Toss gently and season to taste with lemon peel, lemon juice and salt.
Serve chilled.
