Crunchy Baked Apples recipe

- Ingredients:
- 6 apples (Rome Beauty, Pippin, or Golden Delicious)
- 1/3 cup dates, chopped
- 1/2 teaspoon cinnamon
- 3 teaspoons lemon juice
- 3 Tablespoons melted butter
- 1/3 cup granola
- 1/4 cup chopped walnuts
- 1/4 teaspoon nutmeg
- 2 to 3 Tablespoons honey
- 1 cup or more of apple juice or water
Instructions:
Preheat oven to 350 degrees. Core the apples and stand upright in glass baking dish. Combine granola, dates, walnuts, cinnamon, nutmeg, lemon juice, and honey. Be sure you have made a clean cavity in the apple. Spoon equal amounts of filling into center of each apple. Pack the filling in tightly. Combine 1 Tablespoon of the honey with butter and apple juice. Pour over apples. Bake covered for 30 minutes and uncovered for another 30 minutes, basting with the liquid.
Serve warm or cool. Pass with a pitcher of cream.
