Crostini with Pea Spread recipe
|300 g||peas, frozen|
|100 g||Parmesan cheese|
|salt and pepper|
|8 slice(s)||Ciabatta bread|
|2 tbsp||olive oil|
In a saucepan, cook the peas with 100 ml water over medium heat for 5 minutes.
In the meantime, wash the spring onions then cut into rings. Dice the bacon. Melt the butter in a skillet and sauté the spring onions and the bacon. Allow to drip off the surplus fat on kitchen paper.
Preheat the oven to 200°C. Grate the cheese.
Drain the peas, then purée and season with salt and pepper. Combine with onion and bacon and 50 g of the Parmesan cheese.
Sprinkle the bread with olive oil and place on a lined baking tray. Bake for 2 minutes. Evenly divide the pea spread on top and sprinkle with the remaining cheese. Bake for another 10 minutes or until golden brown.
