Crock pot potato soup recipe details
Easy soup to throw in one pot and slow cook. The cream cheese adds a flavor that is superb. My kids love this.

Ingredients
Serves: 8- 1/2 pound bacon cooked crisp, drained and crumbled
- 1 medium onion
- 2 cloves garlic (minced)
- 2 tablespoons butter
- 8 cups peeled and chopped potatoes (about 5 pounds)
- 4 carrots peeled and cut into chunks
- 1 slice ham steak, cut into cubes
- 3 – 14 1/2 ounce cans chicken broth
- 1 – 8 ounce pckg cream cheese (softened)
- 1 – 10 ounce can cream of chicken soup
- 1 tablespoon rosemary
- 1/4 teaspoon pepper (or to taste)
- cornstarch (optional)
Preparation method
Prep: 30 mins | Cook: 4 hours1. Cook bacon and set aside. Reserve 1 tbls of bacon fat. Chop onion and saute in reserved bacon fat. Add garlic and butter to onions, saute lightly so as not to burn.
2. In a 4 quart Crock pot add potatoes, onion, carrots, ham and bacon.
3. In a separate bowl mix together chicken broth, cream cheese and soup. Pour over ingredients in crock pot. Sprinkle rosemary and pepper on top.
4. Cover and cook for 4 to 5 hrs on high (stirring if needed) or 8 to 10 hrs on low. if you like a little thicker soup, mix 2 tbls cornstarch with cold water and thicken to your liking.
