Ingredients

4 small duck breasts, 700 -750 g
2 tbsp light soy sauce, 30 ml
3 tbsp clear honey, 45 ml
1 tbsp sesame seeds
3  mandarin oranges
1 tsp cornflour
sea salt
black pepper, freshly ground
Szechuan (Sichuan) pepper

Instructions

Cut in the skin of the breasts diagonally at intervalls with a sharp knife.

Sprinkle Szechuan (Sichuan) pepper, dry-roast and ground,
and sea salt over the breasts before baking.

Place the duck on a rack in a backing-tray and roast it in a preheated conventional oven at 180ºC for a total of appr. 45 minutes.

Mix 1 tbsp of the soy with 2 tbsp of the honey and after 30 minutes brush the mixtures over the breasts. Sprinkle with sesame seeds and continue to brush 2 times.

Optionally switch on the grill for a couple of minutes. Be careful not to burn it. For a more rosy result, reduce the baking time.

Meanwhile grate the rind from 1 mandarin and sqeeze it. Squeeze a second one and mix together the rind, juice and cornflour in a saucepan.

Stir in the remaining soy sauce and honey. Heat and stir until it thickened and looks glassy.

Season to taste. Peel and slice the remaining mandarin and heat in the sauce shortly.

Serve the duck with the sauce immediatly, accompanied by rice and e. g. chinese mixed vegetables.
