Asia Style Roast Duck Breast recipe

Ingredients
fresh root ginger, 2cm | |
1 stalk(s) | lemon grass |
6 tbsp | soy sauce |
1 tbsp | honey |
1 tbsp | lime juice |
½ tsp | Sambal Ulek or chili paste |
1 clove(s) | garlic |
2 | duck breasts, approx. 330g each |
1 tsp | corn starch |
2 | limes |
Instructions
Finely cut the lemon grass and the ginger. Stir together with soy sauce, honey, lime juice, sambal ulek and finely chopped garlic. Score the skin of the duck breasts with a sharp knife to create a diamond pattern. Turn the duck breasts in the marinade and marinate for approximately 1 hour.
Preheat the oven to 200°C.
Take the duck breast out of the marinade, then gently pat dry with kitchen paper. Place skin side down into a dry skillet and fry until golden brown, then turn and fry for another 2 minutes. Transfer into a casserole dish and bake in the oven, skin side up, for 5-8 minutes.
Heat the marinade and thicken with a little of a water and corn starch mixture. Gently cook until transparent and viscous.
Serve the duck breast with the sauce and garnish with lime.
