Ingredients

4 sprig(s)	thyme, chopped
500 g	chicken wings
500 g	chicken legs
250 g	tomatoes, diced
	salt
	cayenne pepper
1 can(s)	kidney beans, drained
1 can(s)	corn, drained
½ bunch(es)	spring onions, sliced
2 clove(s)	garlic, minced
	paprika powder
3 tbsp	white wine vinegar
2 tbsp	oil

Instructions

Mix together the thyme, garlic, 1 tablespoon of salt and 1 teaspoon of paprika powder. Rub the chicken legs and wings with the mixture. Preheat the oven to 180°C. Divide the chicken pieces on an oiled baking tray, skin side up. Roast for 45 minutes until golden and crispy.

In a pan, heat the oil and sauté the spring onions for a minute or two. Pour in the vinegar. Season with salt and cayenne pepper. Add the tomatoes, beans and the corn and toss until well coated.

Serve the salad with the crispy chicken pieces.
