Ingredients
250 ml | blood orange juice |
2 | egg yolks |
1 | egg |
125 ml | milk |
4 tbsp | almond flakes |
2 tbsp | sugar |
1 tbsp | butter |
30 g | cornflour |
100 g | flour |
1 pinch(es) | salt |
3 tbsp | sparkling water |
1 tbsp | icing sugar |
oil, for frying |
Instructions
Bring the orange juice with the sugar to a boil. In a small bowl, mix the cornflour with a dash of water and stir the mixture into the juice. Simmer for a minute. Pour into a bowl and whisk in the egg yolks. Cover with foil and allow to cool. Refrigerate for an hour.
Mix the flour with milk, salt and the egg. Allow to stand for 15 minutes. Stir in the sparkling water. In an oiled pan fry 4 crÍpes out of the batter.
Place the crÍpes onto warmed plates, add 2 tablespoons of the orange sauce onto each and fold over to crescents. Serve immediately, sprinkled with almond flakes and dusted with icing sugar.
