Ingredients
6 medium | eggs, yolks and whites separated |
100 g | sugar |
1 tbsp | cornstarch |
180 ml | milk |
½ tsp | vanilla extract |
1 large | orange |
115 g | chocolate |
3 tbsp | butter |
whipping cream, whipped |
Instructions
Combine egg yolks and sugar and beat until fluffy. Add the cornstarch, milk and vanilla and heat gently in a double boiler (or a bowl over boiling water) until slightly thickened, stirring constantly.Keep stirring constantly until the chocolate has melted. Remove from heat and stir in the butter. Set aside and let cool to room temperature.
In another bowl whip the egg whites until stiff and combine with cooled chocolate mousse. Spoon into dessert glasses and chill for 2 hours.
Use a vegetable peeler to peel rind off from the orange. Slice into very fine shreds and boil with 2 tablespoons sugar and 2 tablespoons water until crystallized, about 5 minutes.
Top each mousse with a swirl of whipped cream and garnish with the crystallized orange rind.
