Creamy wine sauce recipe details
Ingredients
8 stalk(s) | spring onion, finely chopped |
125 ml | white wine, dry |
1 tbsp | sherry vinegar |
250 ml | cream |
125 g | butter, unsalted, chilled and cut into small cubes |
some | salt and freshly ground black pepper to taste |
Instructions
Mix onions, wine and vinegar and boil uncovered until reduced by half. Add the cream and cook, stirring until sauce thickens.Remove from the heat and whisk butter, piece by piece, into the sauce.
Make sure each piece is dissolved before adding the next.
Season to taste. Serve with fish, crayfish or prawns.
