Ingredients
Makes: 5 cups- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped green pepper
- 1/4 cup butter, cut into small cubes
- 2 tablespoons flour
- 1 cup beef broth
- 2 cups half-and-half
- 1/4 pound sliced deli corned beef, coarsely chopped
- 3/4 cup sauerkraut, rinsed and well drained
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup (4 ounces) shredded Swiss cheese
Preparation method
Prep: 10 mins | Cook: 20 mins1. Melt butter in a large saucepan over medium heat. Cook onion, celery, and green pepper in melted butter for about 6 minutes, until onions are translucent. Sprinkle with flour and toss to coat.
2. Slowly pour in the beef broth and let the mixture come to a boil. Cook for 2 minutes while stirring to thicken, then turn heat down to low. Add remaining ingredients, except for cheese, and heat through.
3. Stir in cheese to melt, then serve.
