Creamy Curry Fennel Soup with Shrimps recipe
Ingredients
2 medium | potatoes, peeled, diced |
1 medium | onion, chopped |
3 bulb(s) | fennel, finely sliced, keep green for topping |
1 medium | apple, peeled, cored and diced |
20 g | butter |
1 tsp | Madras curry |
1 large can(s) | coconut milk |
1 | orange, juice |
500 ml | vegetable broth |
200 g | shrimps |
Instructions
Fry potatoes, onion, fennel and apple slowly in butter, add curry. Fry for 5 minutes.
Add coconut milk and broth, cook for 15-20 minutes. Add orange juice and blend, season with salt and cayenne.
Add shrimp and finely chopped green fennel.
