Creamy Chilli Coconut Mushrooms recipe

Ingredients
2 tbsp | groundnut oil |
2 clove(s) | garlic, finely chopped |
2 small | red chillies, seeded and sliced into rings |
1 small | green chilli, seeded and sliced into rings |
3 | shallots, finely chopped |
200 g | mushrooms, thickly sliced |
140 ml | coconut milk |
2 tbsp | coriander, chopped |
some | salt |
some | black pepper, freshly ground |
Instructions
Pour oil in a hot wok or heavy based pan and add garlic and chillies. Stir-fry for a few seconds.Add shallots and stir-fry for about 3 minutes until softened. Add mushrooms and stir-fry for another 3 minutes.
Pour in the coconut milk and bring to the boil. Boil over medium heat until the liquid has reduced and coats the mushrooms.
Season to taste with salt and pepper.
Stir in the chopped coriander and serve immediatly e. g. with grilled or roasted meats or poultry.
