Creamy chicken and fresh veggie pizza recipe details

Ingredients
Serves: 4- 1 (14 ounce) prebaked Italian bread shell pizza crust, such as Boboli
- 1 cup fresh baby spinach
- 4 teaspoons flour
- 1 1/4 cups milk
- 1 1/2 cups cubed cooked chicken breast (see footnote)
- 1/3 cup shredded Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 cup sliced fresh mushrooms
- 1 tomato, seeded and chopped
- 1 small onion, diced
- 1/2 cup chopped green bell pepper
- 1/4 cup sliced black olives
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded Colby Jack cheese
Preparation method
Prep: 20 mins | Cook: 10 mins1. Place spinach and 1 tablespoon water in a glass or plastic bowl. Cover, then microwave on High for 4 minutes. Allow to cool slightly, then drain and press dry.
2. Whisk flour into milk in a saucepan. Set over medium heat. When milk boils, cook for 2 minutes, continuing to stir until the sauce thickens.
3. Stir in Parmesan, chicken, salt, pepper, and cooked spinach. Heat through and stir to melt cheese.
4. Preheat oven to 425 degrees F and set crust on a baking sheet.
5. Pour chicken spinach sauce over the crust. Arrange mushrooms, tomato, onion, green pepper, olives, mozzarella, and Colby Jack on top.
6. Bake for 10 minutes to melt the cheese and heat the pizza through.To quickly cook chicken:
For 1 1/2 cups cubed cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 3/4 pound skinless, boneless chicken breasts (cubed) for 5 minutes or until chicken is no longer pink.
