Ingredients
Serves: 8- 2 pounds red potatoes
- 3 hard-boiled eggs
- 2 ounces diced pimentos
- 2 scallions, chopped
- 2 slices crispy bacon, chopped
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 tablespoons yellow mustard
- 1 tablespoon white sugar
- 1 tablespoon red wine vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon celery seed
- 1/4 teaspoon garlic powder
Preparation method
Prep: 40 mins | Cook: 20 mins1. Cook whole potatoes in a saucepan (with enough water to cover) for approximately 20-25 minutes; drain; cool, then chop into 1-inch cubes. Peeling is optional.
2. Place potatoes in large bowl with chopped eggs.
3. Combine pimentos and next 11 ingredients (this mixture can be prepared in advance and left in fridge overnight). Pour mixture over potatoes and egg.
4. Toss gently to cover potatoes. Sprinkle paprika over top to garnish.
