Creamy banana coconut pie recipe details
Ingredients
230 g | coconut |
115 g | butter, melted |
150 g | sugar |
60 g | flour |
3 tbsp | cornstarch |
¼ tsp | salt |
800 ml | whipping cream |
4 medium | eggs, yolks only, beaten |
2 tsp | vanilla extract |
2 | bananas, sliced |

Instructions
Preheat oven to 180°C.Combine melted butter and coconut flakes in a large skillet over medium low heat. Sauté until golden brown. Press mixture into bottom and up sides of greased pie pan. Bake for 7 minutes.
Combine sugar, flour, cornstarch and salt in a saucepan. Gradually add cream and bring to boil. Continue to cook, stirring constantly, for 2 minutes. Add small amount of the hot mixture to lightly beaten egg yolks and then pour egg yolk mixture to rest of the sugar mixture in pan. Cook for 2 minutes. Remove from heat and add vanilla extract. Set aside and leave to cool.
Place sliced bananas on coconut crust. Cover with pie filling and place in refrigerator to chill until set, about 2 hours.
Garnish with banana slices and whipped cream.
