Creamy banana coconut pie is a delectable dessert that combines the rich flavors of ripe bananas and luscious coconut. This recipe is perfect for those who crave a creamy and tropical treat. Ingredients

230 g coconut
115 g butter, melted
150 g sugar
60 g flour
3 tbsp cornstarch
¼ tsp salt
800 ml whipping cream
4 medium eggs, yolks only, beaten
2 tsp vanilla extract
2  bananas, sliced
whipping cream, for garnish
sliced bananas, for garnish

Instructions

Preheat oven to 180°C.

Combine melted butter and coconut flakes in a large skillet over medium low heat. Sauté until golden brown. Press mixture into bottom and up sides of greased pie pan. Bake for 7 minutes.

Combine sugar, flour, cornstarch and salt in a saucepan. Gradually add cream and bring to boil. Continue to cook, stirring constantly, for 2 minutes. Add small amount of the hot mixture to lightly beaten egg yolks and then pour egg yolk mixture to rest of the sugar mixture in pan. Cook for 2 minutes. Remove from heat and add vanilla extract. Set aside and leave to cool.

Place sliced bananas on coconut crust. Cover with pie filling and place in refrigerator to chill until set, about 2 hours.

Garnish with banana slices and whipped cream.
