Ingredients
Makes: 2 dozen- 1 (8 ounce) package spreadable chive and onion cream cheese
- 1 cup crumbled blue cheese
- 4 green onions, chopped
- 2 garlic cloves, minced
- 6 slices bacon
- 16 large fresh mushrooms, de-stemmed
Preparation method
Prep: 50 mins | Cook: 20 mins1. Cook bacon until crispy in a skillet over Medium High heat. Set aside on paper towels until cool enough to touch, then crumble finely.
2. Preheat oven to 375 degrees F. Spray a 9×13-inch baking dish with nonstick cooking spray.
3. In a mixing bowl, mix the cream cheese, blue cheese, onions, garlic, and 1/4 cup of the crumbled bacon together. Spoon mixture into the mushroom caps, about 1 tablespoon per mushroom.
4. Place stuffed mushrooms in baking dish, sprinkle with the 1/2 cup of remaining bacon bits, and bake for 18 to 22 minutes.
