Creamed Zucchini and Onions Casserole recipe
|1 clove(s)||garlic, minced|
|2 medium||onions, chopped|
|4 medium||zucchini, peeled, cut into bite size pieces|
|1||red pepper, seeded, diced|
|180 ml||sour cream|
|1 tsp||dried basil leaves|
|1 tbsp||red wine vinegar|
|Cheddar cheese, grated|
|salt and pepper, to taste|
Preheat oven to 150°C.
Melt butter in a skillet and sauté garlic and onion until soft. Add a little water, zucchini and red pepper. Sauté about 5 minutes until tender.
In a bowl combine sour cream, basil, vinegar and salt and pepper. Stir to mix and pour over zucchini. Spoon into a casserole and bake for 15 minutes.
Serve immediately with grated cheese, if desired.
