Creamed zucchini and onions casserole recipe details
Ingredients
1 tbsp | butter |
1 clove(s) | garlic, minced |
2 medium | onions, chopped |
4 medium | zucchini, peeled, cut into bite size pieces |
1 | red pepper, seeded, diced |
180 ml | sour cream |
1 tsp | dried basil leaves |
1 tbsp | red wine vinegar |
Cheddar cheese, grated | |
salt and pepper, to taste |
Instructions
Preheat oven to 150°C.Melt butter in a skillet and sauté garlic and onion until soft. Add a little water, zucchini and red pepper. Sauté about 5 minutes until tender.
In a bowl combine sour cream, basil, vinegar and salt and pepper. Stir to mix and pour over zucchini. Spoon into a casserole and bake for 15 minutes.
Serve immediately with grated cheese, if desired.
