Creamed spinach recipe details
Ingredients
1 kg | spinach leaves |
1 tbsp | butter |
1 medium | onion(s), or shallots |
2 tbsp | flour |
200 ml | cream |
some | salt and pepper |
nutmeg, freshly ground |
Instructions
Wash the spinach leaves thoroughly and blanch them in boiling water for 5 minutes. If the stems are a bit tough, you may need to trim them beforehand. Strain spinach and let it cool.Then chop the leaves. Finely dice the onion or shallots. In a big pot, melt the butter over medium heat, add the onion, and sweat it until it becomes translucent.
Add spinach and continue to cook for about 2 minutes. Sprinkle with flour, stir, and add cream. Bring to a boil and let it reduce to the desired consistency.
Season with salt, pepper and nutmeg. You may substitute part of the cream with milk or vegetable stock.
