Ingredients
1 head(s) | celeriac, peeled and chopped |
salt and freshly ground black pepper | |
200 ml | single cream |
20 g | butter |
freshly grated nutmeg | |
20 g | flour |
2 | onions, chopped |
500 ml | milk |
250 ml | vegetable stock |
Instructions
In a saucepan, heat the butter and sauté celeriac and onions for 2 minutes. Dust with flour and cook stirring for another minute. Add the stock and the milk and bring to a boil. Reduce the heat and cook over low heat for 20 minutes.
Purée the soup. Add the cream and cook stirrring until hot. Season to taste with salt, pepper and nutmeg.
