Ingredients
170 g | butter, unsalted |
1 | cream cheese |
500 g | sugar, granulated |
2 | egg(s), beaten |
360 g | flour, all purpose |
½ tsp | baking powder |
½ tsp | baking soda |
½ tsp | salt |
4 | banana(s) |
225 g | pecans, toasted |
1 tsp | vanilla extract |
Instructions
Preheat oven to 350 degrees F/180 degrees C.Grease an 8 or 9-inch (22 – 26 cm) round cake pan with butter.
First melt the butter in a heatproof bowl set over a pan of barely simmering water. Whisk together the eggs, superfine sugar and half the confectioner’s sugar in a large bowl until the mixture is light and fluffy.
Stir in the melted butter. Add the flour and baking powder into the mixture, mix well and slowly stir in half the orange juice.
Pour the mixture into the prepared cake pan and bake in preheated oven for 20-25 minutes.
Preparing the frosting: mix remaining orange juice together with remaining confectioner’s sugar in a bowl. Remove the cake from the oven and let cool. Before serving spread the orange frosting evenly over the cake and let set in a cool place.
Preheat oven to 350 degrees F (180 degrees C). Grease and flour two 8 x 4-inch loaf pans, or line bottoms of pans with parchment paper and spray paper with non-stick cooking spray.
In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating just until combined.
Combine flour, baking powder, baking soda and salt; gradually add to butter mixture, beating at low speed just until blended. Stir in bananas, pecans and vanilla. Spoon batter into prepared loaf pans.
Bake in preheated oven for 60 to 70 minutes, or until a toothpick or wooden skewer inserted in the centre comes out clean and sides pull away from the pan. If necessary, place aluminium foil over breads the last 15 minutes of baking to prevent over-browning.
Cool bread in pans on wire racks for 20 minutes. Remove from pans and cool breads completely on wire racks before slicing.
