A savory mushroom sauce adds flavor to crawfish in this recipe for a light seafood dinner.

Ingredients
Serves: 4- 2 tablespoons butter
- 1 cup chopped mushrooms
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried minced onion
- 1/4 cup sherry
- 3 egg yolks
- 1 cup cream
- 3 cups crawfish chunks
- 4 slices white toast
Preparation method
Prep: 10 mins | Cook: 10 mins1. Melt butter in a saucepan over low heat. Add mushrooms, salt, pepper, and dried minced onion. Cook, stirring, for about 5 minutes to soften.
2. Add the sherry. Cook for 3 more minutes.
3. In a small bowl, whisk the egg yolks with cream. Stir in crawfish, then pour into the saucepan with the mushrooms.
4. Cook for about 2 minutes to thicken. Serve with toast.
