Cranberry coffee cake recipe details
- Ingredients
- 1/2 cup butter or margarine
- 1 cup sugar
- 2 eggs
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon soda
- 1/2 teaspoon salt
- 8 ounces sour cream
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- One 16-ounce can whole-berry cranberry sauce
- 1/2 cup chopped walnuts
- Glaze
- 3/4 cup powdered sugar
- 1/2 teaspoon almond extract
- 1 Tablespoon warm water
- Dash salt
Cream butter and gradually add sugar; beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine dry ingredients; add creamed mixture alternately with sour cream, beating well after each addition. Add extracts and mix well.
Spoon half of mixture into a greased and floured 10-inch tube pan. Spread half the cranberry sauce over batter. Repeat. Sprinkle pecans over. Bake at 350 degrees for 1 hour. While the cake is cooking, prepare glaze by mixing glaze ingredients together. Let cake cool 5 minutes before removing from pan. Drizzle glaze over.
