Cranberry bread recipe details
Ingredients
225 g | plain flour |
175 g | sugar |
3 ½ tsp | baking powder |
½ tsp | bicarbonate of soda |
½ tsp | salt |
1 medium | egg |
2 tbsp | orange zest |
125 ml | freshly squeezed orange juice, 3-4 oranges |
3 tbsp | unsalted butter, melted |
2 tbsp | hot water |
150 g | fresh cranberries, if using dried use about 80-100g and soak in hot water until plump, drain |
75 g | chopped nuts, walnuts, hazelnuts, pecans etc to choice |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F.Grease and line a 2lb, 900g loaf tin.
Sift dry ingredients together into a large bowl.
In a small bowl, beat the egg lightly and add the orange rind and juice, the butter and the hot water. Stir together. Add to dry ingredients, mix well and fold in the cranberries and nuts.
Turn batter into tin.
Bake for about 50 minutes or until a skewer inserted into centre comes out clean.
Cool for 10 minutes in tin and turn out to a wire rack to cool completely. Remove lining when cold.
Slice to serve.
