3/4 cup milk
1/2 cup cooking oil
1/3 cup sugar
1 egg
3 teaspoons baking powder
1 teaspoon salt
2 cups all-purpose flour
1 Tablespoon grated lemon peel
1/2 cup chopped fresh or frozen cranberries
3/4 cup fresh or frozen blackberries
1/2 cup chopped hazelnuts


Combine first eight ingredients and mix well. Gently fold in berries and nuts and place batter in non-stick (or spray with non-stick spray) muffin cups. Bake approximately 20 minutes. Freezes well.

Makes: 12 muffins
