Craig's cold snap chili recipe details
This is always a favorite after that first cold spell of winter. This recipe makes enough to put some away for leftovers. This chili is even better after reheating. An easy recipe that is quick and sure to be a family favorite. Serve and enjoy with crackers, cornbread, cheese or Fritos. This is not a hot chili and is just a tiny bit spicy.

Ingredients
Serves: 10- Extra virgin olive oil
- 1 med. Yellow onion
- 4lb “Chili Grind” coarse ground meat (80/20)
- 3 tbls Chili powder
- 1 tsp Ground cumin
- 1 ½ tsp Salt
- 1 28oz can diced tomatoes
- 1 15oz can crushed tomatoes
- 1 14oz can beef broth
- 2 15oz cans pinto beans (optional)
Preparation method
Prep: 30 mins | Cook: 3 hours1. Put a small amount of EVOO in a large roasting pot. Chop onion and simmer until clear in EVOO. Add Meat and cook until brown. After meat is brown completely, remove most but not all of the grease with a ladle.
2. Add chili powder, cumin and salt to meat and mix in completely. Then add tomatoes, crushed tomatoes and ½ can of broth (place remainder in refrigerator). Cover and simmer on low heat for 2 hours.
3. Then add two cans of beans and cook another 30 minutes. At this point, you can adjust the consistency by adding more beef broth if desired.
