Crab fritters recipe details
Ingredients
150 g | flour |
½ tsp | salt |
2 | egg yolks |
2 tbsp | olive oil |
200 ml | beer, at room temperature |
corn oil or peanut oil for deep-frying | |
2 | egg whites |
350 g | crab meat, cooked |
some | lemon slices, to garnish |
some | parsley to garnish, chopped |
Instructions
In a large bowl, sift together the flour and salt. Make a well in the centre and add the egg yolks, olive oil and beer. Whisk everything together until well combined. Set the batter aside for 1 hour at room temperature.In another bowl, beat the egg whites until stiff. Gently fold the egg whites and crab meat into the batter.
In a deep saucepan, pour in oil to the depth of 5 cm. Heat until very hot.
Working in batches, drop the crab mixture by heaping tablespoonfuls into the hot oil; do not crowd the pan.
Fry until golden brown, about 2 minutes. Transfer to paper towels to drain.
Arrange the hot fritters on a platter. If desired, garnish with lemon and parsley.
