Ingredients

150 g flour
½ tsp salt
2  egg yolks
2 tbsp olive oil
200 ml beer, at room temperature
corn oil or peanut oil for deep-frying
2  egg whites
350 g crab meat, cooked
some lemon slices, to garnish
some parsley to garnish, chopped

Instructions

In a large bowl, sift together the flour and salt. Make a well in the centre and add the egg yolks, olive oil and beer. Whisk everything together until well combined. Set the batter aside for 1 hour at room temperature.

In another bowl, beat the egg whites until stiff. Gently fold the egg whites and crab meat into the batter.

In a deep saucepan, pour in oil to the depth of 5 cm. Heat until very hot.

Working in batches, drop the crab mixture by heaping tablespoonfuls into the hot oil; do not crowd the pan.

Fry until golden brown, about 2 minutes. Transfer to paper towels to drain.

Arrange the hot fritters on a platter. If desired, garnish with lemon and parsley.
