Ingredients
3 tbsp | butter |
1 | green onion |
2 tbsp | red bell peppers, diced |
1 clove(s) | garlic, finely diced |
3 tbsp | heavy cream |
1 tbsp | Dijon mustard |
1 | egg(s) |
½ tbsp | parsley, finely chopped |

1 cup(s) | breadcrumbs |
¼ cup(s) | Parmesan cheese, grated |
500 g | crabmeat |
2 tbsp | vegetable oil |
Instructions
Melt 2 tbsp butter in frying pan over medium heat.Slice green onion into fine rings and add to butter, along with bell peppers and garlic. Sweat out for a few minutes, but do not let it take on color. Pull off burner and let cool for a little while.
In a bowl, mix cream, mustard, egg and parsley. Add pepper and onion mixture and half of the breadcrumbs. Mix well and carefully fold crabmeat into mixture.
Divide into 8 equal parts, roll into small balls and press into patties about 1.5 cm thick. Mix parmesan and rest of breadcrumbs and bread patties. Refrigerate for about 2 hours.
Melt rest of butter and oil in a pan and fry patties for about 3 minutes per side over medium heat. You could also bake them in the oven for 7-10 minutes at 200°C. Also try adding some cornflakes or rolled oats to the breading.
