|4 tbsp||fresh herbs:|
|4 tbsp||mayonnaise or crème fraîche|
|grated rind of 1 lemon|
|2 tbsp||lemon juice|
Dip the herbs into boiling water for about 10 seconds, then refresh and run under cold water.
Drain herbs and then put into a blender together with the grated rind to chop them finely and to combine well. Then add mayonnaise and lemon juice and process until smooth.
Chill in the fridge for about 30 minutes for the flavours to infuse.
