Adapted from my favorite Britton recipes for U.S. Standard measurements. The flavor is highly variable depending on your choice of beer; Hoegaarden(R) produces excellent results. Best served with a French cider or Flemish sour ale.
Ready in: 1 hour 40 mins
- 5 eggs
- 3 tablespoons sugar
- 2 cups flour
- 12 ounces beer
- 10 ounces milk
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- pinch salt
- salted butter
Preparation methodPrep: 1 hour 30 mins | Cook: 3 mins | Extra time: 7 mins
1. Place all ingredients except the salted butter in a large mixing bowl and mix using egg beaters until smooth. Let the batter sit for 1 hour at room temperature.
2. Heat a 9 inch non-stick pan at high temperature; butter with salted butter. Pour a small ladle of batter into skillet and rotate to cover the whole surface with a thin layer.
3. Flip over after 1-2 minutes and add toppings (sugar, Nutella(R), fruits, etc.). Fold into a triangle by bringing three sides of the crêpe onto each other consecutively.
