Ingredients
2 large | onions |
5 | tomatoes |
2 l | mashed tomatoes |
400 ml | tomato puree |
3 l | water, or beef stock if you like |
1 tbsp | Herbes of the Provence |
1 tbsp | black pepper |
1 tbsp | salt |
1 tbsp | oregano |
4 clove(s) | garlic, minced |
500 ml | cream |
300 ml | tomato ketchup |
500 g | mixed vegetables, root, leek, celeriac, etc. |
200 g | lardon, smoked |
olive oil, for frying |
Instructions
Peel the tomatoes. Chop the onions and fry them in the olive oil.
Add the lardons and after 5 minutes add the peeled tomatoes, Herbes of the Provence, pepper, salt, oregano and garlic. Let it simmer for 5 minutes and add the mixed vegetables.
Let it rest for 5 minutes and now add the mashed tomatoes, tomato purée, tomato ketchup and water (maybe you don´t need the full 3 litre, just add water to get a nice texture). Let it simmer until the vegetables are almost done but still have a bit.
To serve, put a little bit of cream in every soup cup and add the soup.
