|2 l||mashed tomatoes|
|400 ml||tomato puree|
|3 l||water, or beef stock if you like|
|1 tbsp||Herbes of the Provence|
|1 tbsp||black pepper|
|4 clove(s)||garlic, minced|
|300 ml||tomato ketchup|
|500 g||mixed vegetables, root, leek, celeriac, etc.|
|200 g||lardon, smoked|
|olive oil, for frying|
Peel the tomatoes. Chop the onions and fry them in the olive oil.
Add the lardons and after 5 minutes add the peeled tomatoes, Herbes of the Provence, pepper, salt, oregano and garlic. Let it simmer for 5 minutes and add the mixed vegetables.
Let it rest for 5 minutes and now add the mashed tomatoes, tomato purée, tomato ketchup and water (maybe you don´t need the full 3 litre, just add water to get a nice texture). Let it simmer until the vegetables are almost done but still have a bit.
To serve, put a little bit of cream in every soup cup and add the soup.
