Cowboy caviar recipe details
This sugar-free variation is sweet and tangy and great as a dip, on chicken or pork, or as a salad topping or side dish.

Ingredients
Serves: 12- 3 sweet bell peppers (red, yellow, orange, green…) minced to make about two heaping cups (530 grams)
- 1/2 of a medium red onion, minced (200 grams)
- 3 15 oz. cans of black beans, pinto beans, or black-eyed peas, rinsed and drained (make a medley using one can of each, about 710 grams total)
- 3 11 oz. cans of white Shoepeg corn (about 930 grams) (vacuum packed white kernal corn, do not substitute or use frozen corn)
- 2 tbs vegetable oil
- marinade:
- 1/2 cup Equal(R) granular sweetner
- 1/2 cup apple cider vinegar
- 2 cups water
Preparation method
Prep: 15 mins | Cook: 35 mins1. Mince the peppers and onion into corn-sized pieces.
2. In a large mixing bowl, toss beans, onions, corn, and peppers together with 2 tablespoons vegetable oil.
3. In a separate small mixing bowl pour in 1/2 cup Equal granular sweetner and pour vinegar over. Mix. Stir in 2 cups water and mix well until dissolved.
4. Pour the marinade over the beans, corn, and onions, cover, and refrigerate overnight.
5. Before serving, let sit in a colander until all excess liquid is strained off.
