Couscous with Vegetables and Shrimp recipe
|200 g||couscous, cooked, leftover|
|4 tbsp||olive oil|
|1 large||onion, diced|
|1||bell pepper, cleaned and diced|
|500 g||shrimp, shelled and cooked, or chicken breast strips, cooked|
|herbs of your choice|
|2 clove(s)||garlic, minced|
|100 ml||chicken stock|
|salt and pepper|
In a large saucepan heat olive oil and sauté onion, garlic and peppers. Add tomatoes and couscous and cook stirring for a few minutes. Add the herbs of your choice. Stir in the turmeric for a nice yellow colour. Now add shrimp or chicken breast and chicken stock. If too dry, add more stock. Cook stirring until all is hot and well combined. Season to taste with salt, pepper and paprika powder.
The recipe can easily be modifies by whatever your fridge offers, e.g. cooked fish or pork, green beans or broccoli.
