Couscous and chicken breast casserole recipe details
Ingredients
400 g | couscous |
3 tbsp | olive oil |
600 ml | vegetable stock |
2 | shallots, chopped |
300 g | chicken breast |
salt and pepper | |
1 tbsp | baharat, if available; Middle East mixed spices |
1 tsp | freshly ground ginger, alternatively 2 tsp. ginger powder |
500 g | mixed vegetables, frozen, thawed |
150 ml | milk |
150 ml | single cream |
2 | eggs |
salt and pepper | |
200 g | Feta cheese, crumbled |
2 tbsp | parsley, chopped |
2 tbsp | fresh coriander leaves, chopped |
Instructions
Pour over the couscous 1 tablespoon of olive oil and the boiling vegetable stock and allow to soak for 10 minutes.Cut the chicken breast in slices. In a skillet heat 2 tablespoons of oil and sauté the chopped shallots and the chicken breast. Season with salt, pepper, baharat and ginger.
Combine the meat and shallots with the couscous, add the vegetables and transfer the mixture into a greased casserole dish.
Whisk the milk with the single cream and the eggs. Season with salt and pepper and add half of the Feta cheese. Pour the sauce over the casserole. Sprinkle the remaining cheese on top and bake at 200°C for approximately 30 minutes.
Serve sprinkled with chopped parsley and coriander.
