Country Breakfast Bake with Artichokes and Cheese recipe

- Ingredients:
- 6 ounces seasoned croutons
- 4 medium tomatoes, sliced
- 1 pound Swiss cheese, sliced
- 8 ounces fresh mushrooms, sliced
- One 8.5-ounce can unmarinated artichoke hearts, drained and quartered
- 17 large eggs
- 3/4 to 1 cup half and half
- 1/2 cup Parmesan cheese
Preheat oven to 450 degrees. Line a 9 x 13-inch greased casserole dish with croutons. Follow with a layer of tomatoes, Swiss cheese, mushrooms, and artichoke hearts. Break eggs (including the yolks) over the top to cover the entire casserole. Drizzle with half and half. Bake for 20 minutes, adding the Parmesan halfway through baking.
