Cottage cheese pancakes with hot blueberry sauce details
- Ingredients:
- 1 cup cottage cheese (I use light)
- 1 cup Ceresota flour
- 4 extra large eggs
- 6 Tablespoons melted butter or oleo
- Sauce:
- 2 cups blueberries
- 1 can water, divided
- 1/2 cup sugar
- 1 Tablespoon fresh lemon juice
- 1 Tablespoon cornstarch
Mix cottage cheese, eggs and butter. Fold in flour with a spatula. Bake on griddle.
Wash blueberries. Combine with sugar, lemon juice and 1/2 cup water in sauce pan. Bring to a boil, then lower heat and cook 3 to 5 minutes, stirring. Mix cornstarch thoroughly in 1/2 cup water. Pour into blueberry mixture. Boil for 1 minute or until it thickens.
