Costa rican arroz con camar n rice with shrimp recipe details
My brother Jake and I ate this dish almost everyday on a surfing trip to Costa Rica. This is my best approximation of it. Very hearty, tasty meal.

Ingredients
Serves: 6- 1 Box your favorite Spanish Rice Mix
- 1 (14.5 ounce) can coarsely diced tomatoes
- 1 pound cooked shrimp
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon ground sea salt
- 1/4 teaspoon black pepper
- 3 to 4 tablespoons green chili salsa (salsa verde)
Preparation method
Prep: 10 mins | Cook: 30 mins1. Start the rice mix according to the box, but substitute any tomato product for the coarsely diced tomatoes.
2. Halfway through the simmer down for the rice, add all the powdered spices.
3. With five minutes left on the rice cook time, add the shrimp and finish the reduction on the rice.
4. Let stand for 5 minutes, then add the salsa verde to taste.
5. ALTERNATIVE #1 – Instead of cooked shrimp, get raw shrimp and marinate it to taste with lemon juice, garlic juice and jalapeno juice, then sauté or broil it with the powdered spices until it’s nearly done, then add it to the rice in the last five minutes of cooking.
6. ALTERNATIVE #2 – Cook the shrimp with my chimichurri sauce (found on this site).
