Ingredients

2 ½ kg chicken, skinned and off the bone
For the sauce:
2 tbsp vegetable oil
1 small onion, finely chopped
1 tbsp curry paste
1 tbsp tomato puree
100 ml red wine
1  bay leaf
1 small lemon, juiced
2  apricots, halved, puréed in blender
300 ml mayonnaise
100 ml whipping cream
salt and pepper, as desired
For garnish:
watercress

Instructions

Cut the chicken into small pieces and grill it until cooked.

Heat the oil in a small saucepan and sauté the onion for about three minutes, until softened. Add the curry paste, tomato puree, wine, bay leaf and lemon juice. Simmer, uncovered, for about 10 minutes until well reduced. Stir occasionally. Strain and leave to cool.

Combine the puréed apricots with the mayonnaise and the cooled sauce. Whip the cream to stiff peaks and fold into the mixture.

To serve:
Combine the sauce with the chicken pieces, garnish with watercress and serve.
