Ingredients

250 g self-raising flour
125 g unsalted butter
125 g currants
½ tsp mixed spice
30 g candied peel
60 g sugar
300 ml milk
1 medium egg, beaten, to glaze

Instructions

Preheat oven to Gas Mark 4, 180°C, 350°F.

Place the flour in a bowl and rub in the butter. Mix in the currants, peel, sugar and spice and add enough of the milk to create a soft but not wet dough.

Turn out the dough onto a lightly floured surface and roll out to about ½ inch or 12mm thick and cut out rounds of about 4-5 inches, 10-12.5cm diameter using a cutter or wide-brimmed glass. Brush the tops with beaten egg and place on a lightly greased baking tray.

Bake for about 10-15 minutes until risen and golden.

Allow to cool slightly. Eat warm split in half and spread with butter.
