Cornish tea cakes recipe details
Ingredients
250 g | self-raising flour |
125 g | unsalted butter |
125 g | currants |
½ tsp | mixed spice |
30 g | candied peel |
60 g | sugar |
300 ml | milk |
1 medium | egg, beaten, to glaze |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F.Place the flour in a bowl and rub in the butter. Mix in the currants, peel, sugar and spice and add enough of the milk to create a soft but not wet dough.
Turn out the dough onto a lightly floured surface and roll out to about ½ inch or 12mm thick and cut out rounds of about 4-5 inches, 10-12.5cm diameter using a cutter or wide-brimmed glass. Brush the tops with beaten egg and place on a lightly greased baking tray.
Bake for about 10-15 minutes until risen and golden.
Allow to cool slightly. Eat warm split in half and spread with butter.
