Ingredients

4 medium cornish hens
4 large tangerines, sliced
250 ml freshly squeezed orange juice
65 ml white wine
55 g butter
30 g onions, finely chopped
80 g mushrooms, sliced
30 g walnuts, chopped
30 g thyme
1 tsp salt
1 tsp soy sauce
2 clove(s) garlic, crushed

Instructions

Preheat the oven to 180°C.

Rinse the hens and pat dry. Season with salt inside and outside and place 1 tablespoon of butter into each hen.

In a bowl, mix together the onions, garlic, thyme, mushrooms, tangerines and walnuts. Stuff each hen with some of the mixture.

In a saucepan, mix the white wine with soy sauce, salt and orange juice and bring to a boil. Remove from heat and allow to cool for 5 minutes. Pour 2 tablespoons of the liquid mixture into each hen.

Bake the hens for 50 minutes or until golden brown and crispy. Coat every 10 minutes with the liquid mixture.
