Cornish hen with tangerine recipe details
|4 medium||cornish hens|
|4 large||tangerines, sliced|
|250 ml||freshly squeezed orange juice|
|65 ml||white wine|
|30 g||onions, finely chopped|
|80 g||mushrooms, sliced|
|30 g||walnuts, chopped|
|1 tsp||soy sauce|
|2 clove(s)||garlic, crushed|
InstructionsPreheat the oven to 180°C.
Rinse the hens and pat dry. Season with salt inside and outside and place 1 tablespoon of butter into each hen.
In a bowl, mix together the onions, garlic, thyme, mushrooms, tangerines and walnuts. Stuff each hen with some of the mixture.
In a saucepan, mix the white wine with soy sauce, salt and orange juice and bring to a boil. Remove from heat and allow to cool for 5 minutes. Pour 2 tablespoons of the liquid mixture into each hen.
Bake the hens for 50 minutes or until golden brown and crispy. Coat every 10 minutes with the liquid mixture.
