Corn maquechoux recipe details
- Ingredients
- 3 Tablespoons butter
- 3 to 4 cups corn, fresh or frozen
- 1 cup onion, medium dice
- 2 shallots, small dice
- 1/2 cup red bell pepper, medium dice
- 1/2 cup green bell pepper, medium dice
- 1/2 cup yellow bell pepper, medium dice
- 2 Tablespoons chopped Italian parsley
- 4 Tablespoons chopped scallions
- 1/4 teaspoon dried thyme
- 1 Tablespoon fresh basil
- 1/2 teaspoon cayenne pepper
- 1 cup heavy cream
- Salt and pepper to taste
- Sugar to taste
Melt butter in a sauce pan. Add diced onions and shallots; saute until vegetables are soft but not brown. Add rest of ingredients and simmer until corn is cooked. Adjust taste with salt, pepper, and sugar.
