Ingredients
200 g | corn |
3 medium | eggs |
3 tbsp | flour |
3 tbsp | cornmeal |
2 | spring onions, sliced |
120 g | Cheddar cheese, grated |
60 ml | vegetable oil |
salt and pepper, to taste |
Instructions
Whisk together corn and eggs in a large bowl. Add flour and cornmeal and mix well. Season with salt and pepper.
Stir in green onion and cheddar.
Heat oil in a large skillet over a medium heat. Add batter by the spoonful and flatten to form a pancake.
Cook until golden on both sides.
