Corn blueberry muffins details
- Ingredients
- 1 cup cornmeal
- 1/3 cup sugar
- 1 cup flour
- 2-1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup buttermilk
- 3/4 stick unsalted butter, melted
- 1 beaten egg
- 1-1/2 cup blueberries
Sift cornmeal, sugar, flour, baking powder, and salt. Add buttermilk, butter, and egg; stir slightly. Fold in blueberries. Bake in greased muffin tins at 400 degrees for 20 to 25 minutes.
Yields: 12 muffins
