Coriander Omelette recipe

|3||shallots or 1 small red onion, finely chopped|
|2 large||fresh red chillies, deseeded and finely chopped|
|4 tbsp||fresh coriander, chopped|
|1 tbsp||lemon juice|
|½ tsp||freshly ground black pepper|
|1 tbsp||olive oil|
Beat eggs, add rest of ingredients and mix well.
Heat the oil in a large non-stick frying pan.
Pour in mixture and cook over a medium heat for 5 minutes.
Place pan under a pre-heated grill and cook top of omelette for 5 minutes. Serve.
