Coriander omelette recipe details
Ingredients
4 | eggs |
3 | shallots or 1 small red onion, finely chopped |
2 large | fresh red chillies, deseeded and finely chopped |
4 tbsp | fresh coriander, chopped |
1 tbsp | lemon juice |
1 tsp | salt |
½ tsp | freshly ground black pepper |
1 tbsp | olive oil |
Instructions
Beat eggs, add rest of ingredients and mix well.Heat the oil in a large non-stick frying pan.
Pour in mixture and cook over a medium heat for 5 minutes.
Place pan under a pre-heated grill and cook top of omelette for 5 minutes. Serve.
