Ingredients
For the batter: | |
200 g | butter |
200 g | sugar |
1 tsp | vanilla sugar or vanilla flavouring |
3 | eggs |
500 g | plain flour |
3 tsp | baking powder |
50 ml | milk |
For the decoration: | |
1 packet(s) | desiccated coconut |
½ pack(s) | icing sugar |
chocolate drops | |
water | |
blue food colouring | |
1 pack(s) | mini American cookies |
Instructions
Mix the ingredients for the batter until well combined and spoon the batter into the cups of a muffin tin. Bake in the oven at 180 – 200 degrees for 15 – 20 minutes. Let cool completely.Mix the marzipan with the icing sugar until it becomes smooth, then form the mixture into little eye balls. Apply some chocolate drops as “pupils”. It does not have to be straight – think of the cookie monster.
Put blue food colouring on the desiccated coconut. For best results use a stainless steel bowl. Produce a mixture of icing sugar, water and some blue food colouring.
Dip the muffins headlong into the icing sugar mix, then dip into the coconut mix and allow to dry. Glue the marzipan eyes with some icing sugar mix onto the muffins. Cut the American cookies in half, cut the cookie monster a mouth and put carefully the cookie into it.
