Connecticut beef supper recipe details
There are many variations of this casserole, and this is mine. The cooking time is lengthy, but the reward is pure comfort food.

Ingredients
Serves: 8- 2 pounds beef stew meat
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic salt
- 1 onion, thinly sliced
- 2 tablespoons margarine or butter
- 1 cup water
- 4-5 potatoes, peeled and sliced
- 1 (10.75 ounce) can low fat cream of mushroom soup
- 3/4 cup half-and-half
- 8 ounces light sour cream
- 2 cups shredded Cheddar cheese
- 1 cup crushed butter crackers, or as needed
Preparation method
Prep: 15 mins | Cook: 2 hours 30 mins1. Preheat oven to 350 degrees F (175 degrees C). Season meat with salt, pepper, and garlic salt.
2. Brown meat with onions in the butter until onion is tender. Add water, stir, heat to boiling. Reduce heat, simmer, covered, for 1 hour.
3. Pour meat mixture and liquid into lightly greased 9×13 pan. Arrange sliced potatoes over meat.
4. Mix soup, half-and-half, and sour cream, and pour evenly over meat. Sprinkle cheese evenly over the top.
5. Bake in the preheated oven, uncovered, for 1 hour. Sprinkle with cracker crumbs and bake additional 30 minutes.
