Spring Onion and Carrot Tarte recipe

|120 g||soft butter|
|salt and pepper|
|300 g||carrots, sliced lengthwise|
|250 g||spring onions, sliced lengthwise|
|150 g||cream cheese|
|½ tsp||instant vegetable stock|
Mix together the cream cheese, parsley and vegetable stock. Beat in the eggs. Season to taste with salt, nutmeg and pepper.
In a bowl combine the butter with a pinch of salt, the flour, egg yolks and the water. Knead until well combined. Wrap the dough with foil and allow to cool for 30 minutes.
Preheat the oven to 175°C.
Roll out the dough on a lined surface to a rectangle and line a buttered tart form. Divide the carrots and spring onions on the dough and spread with the cream cheese mixture. Bake for 35-45 minutes.
