Ingredients
Serves: 8- 1/2 head of shredded green cabbage
- 1/2 head of shredded purple cabbage
- 2 carrots – peeled & sliced thin
- 1 red pepper – sliced thin
- 1 yellow pepper – sliced thin
- 1/2 red onion – sliced thin
- 1/2 cup chopped fresh cilantro
- 1/3 cup key lime (or lime) juice
- 2 cloves of garlic – crushed
- 1/2 tsp cumin
- tabasco to taste
- 1/2 cup olive oil
- salt & pepper
Preparation method
Prep: 25 mins | Extra time: 30 mins, chilling1. Slice cabbages, carrots, peppers, red onion, and cilantro. Combine in bowl.
2. In food processor or blender combine key lime juice, crushed garlic, cumin, and tabasco. Slowly drizzle in olive oil while processing or blending. Pour mixture over sliced cabbage & veggies and toss. Salt & Pepper to taste. Let sit for a little while so flavors can blend.
