Cold spaghetti salad with rocket recipe details
Ingredients
300 g | spaghetti |
300 g | cherry tomatoes, halved |
1 tbsp | olive oil |
4 bunch(es) | rocket |
200 g | Parmesan cheese, grated |
2 pack(s) | mozzarella cheese, diced |
170 g | black olives |
For the dressing: | |
8 tbsp | olive oil |
3 tbsp | oil |
4 tbsp | balsamic vinegar |
3 tbsp | apple vinegar |
salt and pepper, to taste |
Instructions
Cook the spaghetti in salted water until al dente. Drain and allow to cool.Heat the olive oil and sauté the tomatoes for 2 minutes. Chop half of the rocket.
Mix together the spaghetti, tomatoes, chopped rocket and rocket leaves, Parmesan cheese, Mozzarella cheese and olives.
In a small bowl, mix together the dressing ingredients. Add the dressing to the salad and mix well. Season to taste with salt and pepper.
