Coffee slow cooker roast beef recipe details

Ingredients
Serves: 8- 6 red potatoes, cut into wedges
- 6 carrots, cut into 1-inch lengths
- 2 ( 2 to 3 pound) beef sirloin tip roasts
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons canola oil
- 1 onion, halved and sliced
- 2 cups whole fresh mushrooms, quartered
- 2 garlic cloves, minced
- 1 1/2 cups brewed coffee
- 1 teaspoon chili powder
- 3 tablespoons cornstarch
- 1/4 cup cold water
Preparation method
Prep: 35 mins | Cook: 6 hours1. Coat the slow cooker bowl with nonstick cooking spray. Scatter potatoes and carrots in slow cooker.
2. Heat oil in a large skillet. Sprinkle beef with salt and pepper, to taste, then place in skillet and sear on all sides, about 10 minutes. Then place in slow cooker.
3. Cook onions, mushrooms, and garlic in the drippings and hot oil in the skillet. Add to slow cooker. Then stir in the coffee, chili powder, and a little salt and pepper. Cover. Cook for 6 hours on Low.
4. Remove meat from slow cooker. Make a gravy: pour all pan juices from the slow cooker into a small saucepan, bring to a boil, then whisk in the cornstarch and cold water. Return to a boil and simmer until thickened.
